Since it is still a bit warm out all over – here is a simple one that takes little actual cooking.
The name is called Chilaqulles – hard to find in any restaurant – and not sure I would even try it unless it was a family owned small Mexican restaurant.
Cut up some corn tortillas into about 2 inch pieces and fry in a pan till crispy – place on a paper towel to absorb the oil and set aside. Cooks hint – never add salt to oil while cooking It makes the oil rancid. You will want to lightly salt the tortillas later.
Now start digging out some of those things you prepared earlier and froze – The red Chile Sauce and the Shredded Beef. Let thaw – in the meantime get out several bowls – shred some cheese, dice some black olives, some dill pickles, and onion and place those in a bowls.
About half hour before serving warm the meat and the sauce. Just place everything on a counter and let people add there own servings and toppings.
Fine as meal in itself – sides try Spanish rice and refried beans
