Fish with Sweet/Hot Sauce:
I still had some of that sauce left over from the tempura and some bell peppers and onions. I also had some fish (Alaskan Pollack) in the freezer. I am not a great fan of whole fish. I sort of play hide the fish so that it gets included in the diet now and then.
Start by cooking some noodles. For this recipe boil water and then add the noodles and cook for just a few minutes. They will be finished later in the oven.
Get out a baking pan, drizzle with olive oil and add a spoonful of butter. Drain the noodles and add that to the pan. Dice the fish into bite size pieces and layer that on the noodles. Spice with some pepper and salt. Dice up the bell pepper and onion and add that. Add a cup of water. Cover with tin foil and let set in the refrigerator for about 30 minutes.
The sauce I made had turned into a jelly over night in the refrigerator. No problem. Get a small sauce pan out add the sweet/hot sauce paste and a cup of water and turn the heat to medium. Meanwhile warm the oven to 350 degrees. The Sauce will turn back to syrup. Pour that over the noodles, fish etc. Place in the oven and bake for 45 minutes.
Serve with garlic bread, and favorite vegetable (anything green suggested).
