Fish with Bean Sauce:
Tired of playing hide the fish? Caught a real nice one? Still cannot get the family to enjoy fish? Try this:
From the store: Some bacon, your favorite fish (if you did not catch one), Cilantro, and a green Chile.
Hopefully you saved a jar of cooked northern beans. If not look that recipe up. It will take about 2-3 hours to cook more.
Remove the stem and seeds from the green Chile and finely chop.
Get that cast iron frying pan out. Start cooking about six pieces of the bacon as if making breakfast you want the bacon nice and crisp. Set them aside on a plate lined with paper towels.
Get the heat up with the bacon grease and start frying the fish. Toss in the green Chile cook until the fish is done. Set aside in a warm oven for a few minutes.
Warm the northern beans. When pre-cooked and stored in the refrigerator, they will already have a nice natural paste look to them and easier to plate.
Serve: A good spoonful of the beans, crumble the bacon and add that to the top of the beans, add the fish with some of the green Chile, top with some cilantro.
Make a nice salad with a vinegar dressing. Italian dressing will do fine. For those that do not like fish that well and the doctor said (eat some), eat a forkful of fish then a forkful of salad. The vinegar will take the fish taste out of your taste buds. With the beans, bacon and Chile you should not be getting that much of a real fishy taste anyway.
