Take out a pot and fill to the ½ mark with cold water and add a cup of dried pinto beans to it. Go to bed or sit up all night playing cards. Tick Tock – Next day. Discard any that are floating at the top. Discard any that have been split in half. Drain all the water out rinse well and place back in the pot. Refill the pot with cold water till the beans are covered. Bring to a boil them simmer till tender about 2 hours. Add salt to taste during the last 30 minutes.
Make refried beans: Add oil (small quantity) or for the real daring lard to a cast iron skillet. Warm the oil on lowest heat possible. Find that potato masher. Drain all the water out of the beans. Let the beans warm in the oil for about a minute or two then start mashing them. Turn the heat up slightly. I also add shredded cheese directly to them and let the cheese melt right in. Stir often.
