Vegetable Ravioli with Wonton Wrappers:
From the store: Fresh spinach and basil leaves, Small Wonton Wrappers, your favorite cheese. If you need chicken broth buy some. Buy a smaller can of tomato sauce and tomato paste also.
Get the cast iron frying pan out. Warm the broth in that to a light boil. Add the spinach and basil leaves and let wilt down. This will only take a few minutes. Strain all this though a colander and let cool until you can handle with your fingers.
Get the wonton wrappers out. The smaller squares are better or cut the larger ones in half. Add a finger full of your spinach/basil to the middle and a little cheese. Top with the other square. Dip your fingers in a cup of water and crimp these into packages. Continue until you have the servings desired.
Steam these packages. Takes about 10-15 minutes depending on how tender you want them. You could also boil them.
Meanwhile in a sauce pan; make a marinara sauce. A small can of tomato sauce with an equal can of tomato paste. Add a little olive oil to the bottom. Go wild with the spices. This will need a pretty good quantity of salt. Other spices: garlic, pepper, oregano, and some cumin.
Serve the ravioli with a spoonful of the marinara sauce. This makes a very nice side dish or even a meal itself.
