California Taco's-easy to make & yummy! baron_von_byron 5/19/2007 13:03

1 lb 93/7 ground beef/chuck..(i like chuck, gives most recipes a better flavor)
2 envelopes Old El Paso Taco Seasoning
about a dozen sliced black olives or a small can sliced olives (i do my own as i love black olives and always have some in the fridge)
1 c. mushroom slices and pieces
1/2 c. Pace Picante Sauce (i use hot you use what your poor tongue/tummy can handle)
1/2 c. garden style salsa (any of em with lots of tomatoe and onion, can be any kind you like)
1/2 c. water
2 ripe and ready avacado's
1/2 head lettuce
12 taco shells (i use soft, you use what you like)
a whole big bunch of grated cheese

brown the meat, add the envelopes of taco seasoning, add the black olives and mushrooms, the salsa's, and the water...stir to mix completely, cover and simmer for a bit and only lift lid to stir about every 10 minutes or so until the liquid is absorbed into the meat mixture....while its simmering, cut up the avacado's into small bite sizes, and shred or chop up your lettuce...if you are using crisp taco shells, you can heat em up in the microwave or a toaster oven, and if you are using soft tortilla's like i do, you can put however many you need between a couple of paper towels and heat for about 15-20 seconds
(for 3 - add more time if you are heating more tortilla's)...i put my cheese on now so it melts when i add the meat to it, then add the lettuce and avacado bites....you wont need hotsauce or anything else but a cold corona or soft drink of your choice and sit down and enjoy!
